Gluten Free Pumpkin Spice Muffins or Cupcakes
By using a Betty Crocker GF Cake Mix, and a few other ingredients, you can whip up these simple GF, egg-free, dairy-free cupcakes or muffins really quickly for an early morning or after school treat.

Servings: 12 cupcakes
- 1 box Betty Crocker GF Vanilla Cake Mix
- 1 15 oz Libby's Pumpkin (Not Pie Filling)
- 1/4 cup liquid coconut oil
- 1/4 cup water
- 1 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp powdered ginger
- 1/2 cup Enjoy Life Chocolate Chips
Place contents of Betty Crocker GF Vanilla Cake Mix into a Medium Mixing Bowl.
Next Stir in liquid coconut oil and water.
Add can of Libby Pumpkin and Stir until combined.
Add 1 Tbsp of Cinnamon.
Add 1/4 tsp of Cloves.
Add 1/4 tsp of Powdered Ginger, and stir until all of the spices are combined.
Next, add 1/2 cup of Enjoy Life Chocolate chips.
Spoon heaping spoonfuls of batter into cupcake papers, or a greased muffin pan.
