Gluten Free Pumpkin Spice Muffins or Cupcakes

By using a Betty Crocker GF Cake Mix, and a few other ingredients, you can whip up these simple GF, egg-free, dairy-free cupcakes or muffins really quickly for an early morning or after school treat.

  • 1 box Betty Crocker GF Vanilla Cake Mix
  • 1 15 oz Libby's Pumpkin (Not Pie Filling)
  • 1/4 cup liquid coconut oil
  • 1/4 cup water
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp powdered ginger
  • 1/2 cup Enjoy Life Chocolate Chips


  • Place contents of Betty Crocker GF Vanilla Cake Mix into a Medium Mixing Bowl.
  • Next Stir in liquid coconut oil and water.
  • Add can of Libby Pumpkin and Stir until combined.
  • Add 1 Tbsp of Cinnamon.
  • Add 1/4 tsp of Cloves.
  • Add 1/4 tsp of Powdered Ginger, and stir until all of the spices are combined.
  • Next, add 1/2 cup of Enjoy Life Chocolate chips.
  • Spoon heaping spoonfuls of batter into cupcake papers, or a greased muffin pan.
