Gluten-Free Chicken Alfredo Pizza

Let me start by saying that even if you aren’t gluten-free, you can use this pizza topping on a regular pizza crust too, so check out the recipe below.

Living with food allergies can be tough! I feel like that especially holds true for me in that I didn’t develop these food allergies and sensitivities until I was well into adulthood, so there were certain foods that I love that I have had to give up… or so I thought! One of my favorite foods is pizza. When I was living Chicago and working there as a nurse, there was nothing quite like a Chicago-style pizza from Uno’s, Giordano’s, or our personal favorite, Lou Malnati’s. Interesting fact, my husband and I had our first date at an Uno’s. We love Chicago styled pizza, and while this is not a thick crust like Chicago style pizza, it does fill my pizza craving.

I discovered that not only could my body not handle gluten, but my body can also not handle nightshades (a category of plants that includes potatoes but not yams, peppers but not peppercorns, eggplant, paprika, and of course, tomatoes) it torpedoed my chances of enjoying many of the Italian dishes I LOVE, like pizza since I can no longer have tomato sauce! For those of you who don’t know, nightshades can cause inflammation and therefore pain in some people. I have fibromyalgia type pain and inflammation at times, but it is much worse when I eat nightshades.

Well, I am finally able to eat pizza, in the form of a delicious gluten-free crispy crust with white sauce that my husband makes me for this Gluten-Free Chicken Alfredo Pizza! He is basically making the same sauce that he makes for our Creamy Italian Chicken Pasta, only a little thicker, and it is absolutely amazing on the Deanna’s Gluten-Free Pizza Crust. Deanna’s Pizza Crust comes with 3 frozen crusts in a bag. You can top them with whatever pizza toppings you want, and then it only takes a few minutes to bake them!

I realize there are many gluten-free pizzas out there that are delicious, but this crust from Deanna’s is the only one I’ve found that doesn’t have potato starch, some nightshade in the crust, or corn, which is another ingredient I’m allergic to. If you don’t have those allergies, you can still use this recipe for the toppings, and use whatever pizza crust works for you.

We discovered Deanna’s Gluten-free products when we were down at Disney World because they use Deanna’s rolls at most of the restaurants for the gluten-free bread they serve at sit down meals. I went online to order some gluten-free rolls for my son, and found the pizza crust! My husband came up with this recipe, and I have been happily able to eat “pizza” ever since! Gluten Free Alfredo Pizza

Equipment

  • Cutting Board
  • Pizza Pan
  • Pizza Cutter
  • Parchment Paper
  • Garlic Press

Ingredients

Sauce

  • ½ cup Baby Spinach chopped
  • 2 tbsp. Olive Oil extra virgin
  • ¼ cup Parmesian Cheese shredded
  • 4 Cloves Fresh Garlic crushed
  • ½ cup Bone Broth
  • cup Heavy Cream
  • 3 tbsp Brown Rice Flour
  • 1 dash Garlic Salt to taste
  • 2 dashes Italian Seasoning

Toppings

  • cup Chicken Breast cooked and chunked
  • 1 cup Mozzarella Cheese shredded

Crust

  • 1 Deanna's Gluten Free Pizza Crust

Instructions

Prep

  • Preheat your oven to 460ºF
  • Chop the baby spinach and set aside, also cut your chicken into small chunks

Sauce

  • Begin by heating a frying pan at medium-low heat. Add the Olive Oil and crushed garlic.
  • Cook the garlic until just browned, then add the chopped spinach and stir until spinach is cooked thoroughly.
  • Next, add bone broth and heavy cream and stir until combined.
  • When the broth and cream begin to steam, add the Parmesan Cheese, Italian Seasoning, Garlic salt, and Rice flour. Stir until combined and sauce thickens.

Crust

  • Place a sheet of parchment paper on the pizza pan, and place one of the gluten free pizza crusts on the parchment paper.
  • Add the sauce to the crust and spread around evenly.
  • Add chicken, then top with mozzarella cheese.
  • Place in the oven and bake for 8-10 minutes until the cheese begins to brown. Since the crust is thin and flat, the cheese and sauce will tend to run over the edge (hence the parchment paper for easy cleanup) but you can usually use a butter knife to scoop the overflow back on top of the pizza.
